Main Deck is a stunning restaurant on the shores of Keuka Lake in Penn Yan, NY, in the Finger Lakes Region of New York State. We are conducting a search for Executive Sous Chef who will report to and assist the Executive Chef. Qualified candidates will have formal classical culinary training and a culinary degree from an accredited culinary institution or the equivalent. Candidates will have demonstrated expertise from previous work experience to create popular dishes, design menus, evaluate COGS for every menu item, manage kitchen labor costs, train cooks and maintain a clean and efficient kitchen. This profile will work closely with the Executive Chef to orient seasonal menus to the changing tastes of the peak and off-peak seasonal customer base, to maintain quality and consistency of kitchen output, to design events menus to pair with local winery offerings, and to design daily menu specials that can be produced efficiently during peak seasonal demand periods. This profile will possess an entrepreneurial and intellectually dynamic mindset and will be a member of the management team whose purpose is to build business value by creating exceptional culinary experiences for our patrons.
Responsibilities to include:
- Assist the Executive Chef in planning and organizing the menu;
- Supervise and train kitchen staff in food handling, preparation, and presentation;
- Ensure compliance with health and safety regulations in the kitchen;
- Monitor inventory levels and order supplies as needed;
- Collaborate with the Head Chef to develop new recipes and menu items;
- Oversee food production during service hours and maximize kitchen output and efficiency;
- Maintain a clean and organized kitchen environment;
- Assist with catering and events as required;
-Assist with identifying local farm and food vendors.
Requirements:
- Proven experience to perform role;
- Strong knowledge of food handling, food management, and kitchen operations;
- Excellent leadership skills with the ability to motivate and guide a team;
- Ability to work well under pressure in a fast-paced environment while maintaining a calm and professional demeanor;
- Strong attention to detail and organizational skills;
- Demonstrated skills in building and maintaining Excel spreadsheets including Excel formula nomenclature;
- Excellent communication and interpersonal skills;
- Culinary degree.
