Heritage Palms HOA/CC, located in Indio, is looking for a talented Executive Chef to lead our culinary team.
The Club is looking for a candidate with at least four years (4) of Executive Chef or Executive Sous Chef experience and has shown a progression throughout the candidate's career spanning numerous positions inside the kitchen.
This position is forward-facing and will require public speaking and visiting members in the dining room. Candidates must possess the personal skills to handle such conversations with tact and professionalism.
Job Summary:
The Executive Chef (EC) is responsible for the entire culinary department on the property. This responsibility includes all food production including dining room, banquet rooms, outdoor events, and beverage carts. The Executive Chef also has supervisory responsibility for the entire culinary team including scheduling as well as the development of all menus, purchases, relationships with vendors, recipes, and ongoing training and development.
Functions:
· EC manages the culinary staff, including hiring, firing, scheduling, bi-annual evaluations, safety compliance, FIFO, labeling, purchasing, and receiving, and HACCP.
· EC creates every menu required on the property (breakfast, lunch, dinner, and banquets), and is responsible for controlling costs.
· EC is responsible for the cleanliness of the kitchen and equipment, and interactions with the Health Department.
· EC coordinates training/re-training for all culinary staff. We believe in investing in our staff, which includes cross training each employee to work in numerous positions.
· EC coordinates and supervises bi-monthly food inventory reviews, as well as processing all invoices with the accounting department.
· Develop and monitor both annual and monthly budgets, as well as set both daily and weekly pars for food preparation.
· Develop recipes and techniques for food preparation and presentation, offering weekly chef specials and rotating regular menus seasonally.
· Develop relationships with vendors to ensure top quality, pricing, and delivery.
Required Knowledge and Training:
· Must possess the ability to work within a team, and communicate effectively with supervisory staff, members, and guests.
· Must have experience supervising employees.
· Must have experience working in a scratch kitchen, and a desire to operate a scratch kitchen.
· Must possess a valid food handling certificate.
· Must possess a high school diploma, as well as a culinary school degree.
Supervision:
· This position supervises the Sous Chef, Line Cooks, Prep Cooks, Pastry Cooks, and Dishwashers.
· This position works alongside the Food and Beverage Director and reports directly to the General Manager.
