DISHWASHER- JOB -SUMMARY: Dishwashers are responsible for cleaning, sanitizing and storage of all dishes and utensils used in the preparation, storage and serving of food. Offer support to the Restaurant staff in completing their duties as requested or needed. Follow all health code regulations and company policies in food preparation, cooking and storage.
ESSENTIAL FUNCTIONS AND RESPONSIBILITIES:
- Operate the dishwashing machine following the correct procedures. Monitor and re-stock all chemicals used by the dishwashing machine for proper wash, sanitize and rinse cycles. Change the water and empty all screens/filters once an hour during peak times and/or after.
- Scrape off any food or garbage left on/in dish (scrub plates), load items into dishwasher tray, rinse off all food particles before running through the dishwasher. Use a scrubber on hard to rinse particles. If food has been set hard, soak as required to remove more easily. The dishwasher is to sanitize the dishes, not to scrub and wash the dishes!
- Gather dirty dishes, glasses and silverware from the front Restaurant area, Bar, and Cigar Lounge. The dishwasher sets up each area with clean bus tubs. As they fill, replace it with a clean empty one.
- During slow times, assist in prep and as cooks need assistance.
- As you are exchanging bus tubs in the front restaurant, clear off any dirty empty tables when you notice the staff are very busy and may not be able to take care of these.
- At the end of your shift (or sooner as needed), take the garbage from the kitchen and restaurant to the dumpsters. Break down all cardboard boxes and take them to the recycle bin.
- If on Day shift: before leaving, clean up your area, pull and empty filters, catch up on as many dishes as possible and put these away without going past your scheduled stopping time. Pass on any pertinent information to the evening staff before leaving.
- If on Evening shift: the kitchen floors will need to be cleaned by the dishwasher in addition to their other cleaning requirements. The floor will be swept and mopped with a degreaser, rinsed, and mopped with a cleaning product.
- Drain the dishwasher when working a closing shift, pulling apart arms, clean out jets, put back together.
- Clean inside and outside of dishwasher machine.
