Chilmark General Store continues to be a community store for the 21st century, a cross between a community market, pizzeria/deli, and central gathering place for locals and travelers. The landmark porch is a true local hub where friends meet for coffee, and celebrities and local workers alike break for lunch. Children come for snacks afterschool, cyclists stop to refuel on their way to the cliffs, laid back business deals are made over coffee, and travelers stop by to pick up a few necessities and try the pizza.
Lead Pizza Cook and Pizza Line Cooks
Chilmark General Store on Martha's Vineyard (MA) is seeking experienced Pizza Cooks to join our 2024 team. The best candidates are experienced pizza cooks with expertise in hand stretched thin crust pizza and are passionate about making great pizza. We are a seasonal business, open May through October. LEAD PIZZA COOK
Reporting
Position reports to: Owner/Kitchen Manager
Subordinate staff: Pizza line/prep cook
Position Summary:
Responsible for the preparation of all Pizza menu items according to recipe and will supervise self and staff to ensure the highest level of quality, efficient production, presentation, and consistency. Leads and train Pizza line/prep cook, prep/production staff, and ensure proper sanitation levels. Maintains an atmosphere of professionalism and teamwork among all members of the kitchen staff.
Essential Functions
1. Preparation of daily prep lists
2. Set up of all ingredients for pizza items according to par.
3. Train and supervise line/prep pizza cook
4. Prepare all pizza items in a sanitary, timely, efficient and correct manner.
5. Have a thorough knowledge of all pizza specs and portions. Use them 100% of the time.
6. Communicate with the counter server and other line stations before plating to coordinate both hot and cold items.
7. Restock and maintain the back up of all ingredients for the pizza stations.
8. At the end of the shift, break down of all equipment and containers stored in the walk-in.
9. Placement of all leftover ingredients in clean containers covered and labeled.
10. Works with Kitchen Manager to monitor/control food costs: tracks dough usage, monitors inventory for all pizza ingredients
11. Incorporates customer feedback into recipes, menu, and daily specials
12. Any additional duties or special projects related to the overall operation of the kitchen as requested by management.
Measures of Effectiveness
1. Prior to the beginning of service, pizza station is well stocked according to the standards set forth in the training programs.
2. Pizza Station items are prepared in a sanitary, timely, efficient and correct manner set forth in the training programs.
3. Pizza Line/Prep cook is trained and preparing all food items according to recipe.
4. Portion sizes of food quality are consistent with standards when evaluated by Kitchen Manager
5. Menu items are prepared according to recipe and portions.
6. Food items are placed on the delivery shelf at the same time as the other hot items and that they are at their peak temperature and appearance.
7. The station does not run out of back-up items.
8. All items are placed into containers and stored in the walk-in at the end of the shift.
9. The stations are clean and sanitary according to the standards in the training program.
10. A sense of urgency and follow through is demonstrated in a timely manner regarding any special projects, tasks and assignments from management.
11. Food costs are consistent or below company standards when evaluated by Kitchen Manager.
12. Customer feedback has been incorporated into production of all food items
Qualifications
Knowledge
1. Knowledge of proper knife handling.
2. Basic sanitation knowledge.
3. Ability to test doneness by touch.
4. Basic cooking methods.
5. Minimum two years experience in an advanced line cook position in a high volume food service environment.
Skills/Aptitudes
1. Proven ability with oral, written and interpersonal communication skills.
2. Demonstration of high energy level.
3. The ability to take direction.
4. Demonstration of organizational skills.
5. The ability to work cooperatively in a team environment.
6. Strict attention to detail.
7. The ability to work calmly and effectively under pressure.
8. Strong sense of urgency.
9. The ability to work on multiple tasks at the same time.
Working Conditions
1. Must be able to report to work when scheduled and work the entire shift.
2. Arrive to work in uniform, which complies with the store standards.
3. This position will spend 100% of the time standing.
4. Regular contact with employees and management is required.
5. This individual must be flexible and have the maturity to respond positively to change.
6. The individual must be able to transport up to 70 pounds regularly and carrying of 15 to 50 pounds.
7. Must be able to speak in English
8. Level The individual will work under moderate to high degree of supervision. This individual must exercise a high degree of common sense.
PIZZA LINE/PREP COOK

Position reports to: Head Pizzaiolo / Kitchen Manager
Subordinate staff: none
Position Summary:
