THE HEAD CHEF OPPORTUNITY AT THE HAMILTON CLUB OF LANCASTER
The Hamilton Club of Lancaster, Pennsylvania, a Top-20 Platinum Private City Club of America, is looking for its successor to the Head Chef position. This is an outstanding opportunity for a talented and experienced Chef who desires to work for an affectionate membership community; report to a General Manager who fully understands the culinary arts; and enjoy the pace and lifestyle that is Lancaster County. Hamilton Club also presents the opportunity for a Chef to build relationships with the persons being served. The Club is open to new culinary offerings. Located in the heart of Lancaster County, the Chef at Hamilton Club has access to produce and proteins from its internationally renowned farming community.
Hamilton Club seeks to continue its rich tradition of excellence in Food & Beverage programming. The outgoing Chef, having been classically trained, has established a “scratch” kitchen, and the membership is sensitive to and supporting of the resources necessary to build upon this foundation. The next Chef will have the full support of the Board of Directors and General Manager for the direction of the culinary programming presented by its new leader.
ABOUT HAMILTON CLUB of LANCASTER
Hamilton Club is a full-service private city club located directly across from the county courthouse in the center of Lancaster city. The Club is an important part of its members’ lives, and they are very appreciative of its history and traditions. Founded in 1889, the Club’s offerings have evolved over time. The Club uses its dining spaces creatively. The Buchanan Room, renovated in 2020, is the Club’s upscale casual restaurant/all day space. Steinman Room was created in 2008 and is a multi-purpose space featuring tablecloth dining and views looking out into the city. Other venues include Tower Bar & Lounge (multi-purpose), Hamilton Rooms (events space), Grille (multi-purpose), cigar lounge, duckpin bowling lanes, health club, and two international sized squash courts.
FOOD & BEVERAGE PROGRAM
Restaurant & Event Volume
The Club operates 1-2 restaurant outlets daily depending on reservation volume. Private Events / Banquets are arranged by the Events manager in conjunction with the Chef. The Chef at Hamilton Club is directly involved in the creation and development of Club Functions that members attend. The Club is open 50 weeks per year (closed the first two weeks of July), with the peak season as mid-Sep through Mother’s Day.
The Club has two kitchens – one dedicated to a la carte outlets and the other dedicated to events / banquets. The largest event at Hamilton Club is Easter Sunday when the Club is home to about 350+ persons. The Club averages about a dozen weddings per year. A busy night in the restaurants is 50-60 diners. A wine dinner will feature 20-40 attendees. The Club’s membership supports its Club Functions: The Top 100 Wine Dinner will be $300+pp in 2023.
Work / Life Balance
Hamilton Club leadership acknowledges the priority of family. Recognizing that many sacrifices are necessary from its Administrative Leadership, the Club offers great work/life balance. The Club is open for lunch and dinner Tue-Fri; dinner only on Saturday. Moreover, the Club is closed on Sundays, Jan 2, Easter Monday, Mother’s Day Monday, Memorial Day, July 4th, Labor Day, Christmas Eve, and Christmas Day. A late night for the culinary team is typically 10pm.
Organizational Structure
The Chef at Hamilton Club reports to the General Manager and works with the Food & Beverage Supervisor and Events Manager. There is currently no committee involvement in the Food programming. There are approximately 10 kitchen team members throughout the year including Sous Chef and Baker. Hamilton Club is home to about 300 membership families, and annual F&B revenues are typically $1.2M.
CANDIDATE QUALIFICATIONS
Any person believing that they are qualified to be the Chef at a top-20 Platinum City Club of America is welcome to apply for this role. Chefs with experience operating events and restaurants will be reviewed. Note that this is a working Chef position – while there is an administrative requirement for Chef at Hamilton Club, Chefs that enjoy cooking will thrive at the Club. Note also that persons having earned the CEC credential will have the title Executive Chef.
