We are a fast paced, high volume, restaurant seeking a dynamic individual for Room Chef.
JOB SUMMARY:
- Provide leadership and supervision consistent with the management philosophy of Corporation.
- Superior knowledge of health codes and compliance responsibilities for management and staff.
- ServSafe certified and ServSafe mentor for information and testing.
ESSENTIAL FUNCTIONS:
- Maintain proper staffing levels in restaurant.
- Enforce Company policies and procedures, including all codes of conduct, appearance, and behavior including but not limited to EEOC goals, fire and safety procedures, harassment, and all company policies while on premises.
- Check restaurant for cleanliness, supplies and properly working equipment.
- Check stations before and after staff shifts to ensure items are properly stocked and prepared for next shift.
- Monitor food and beverage quality, in addition to portion control.
- Walk with health inspectors during inspections, create action plans to prevent demerits and always attain solid "A" scores as directed by Executive Chef.
- Conduct walk-thru in all outlets using the SNHD score sheet and standards in coordination with the Assistant Executive Chef and the Executive Chef.
- Work with Casino safety team and conduct internal scheduled calendar audits with Maintenance Director.
- Work in conjunction with Maintenance Department addressing grout, tile, ceilings, hoods, and refrigeration issues. Assist team identifying and correcting hazardous conditions.
- Safety reports sent to Senior VP and Human Resource Director for review.
- Verify that S.D.S books are available and up to date at required locations.
- Validate required SOPs are posted in restaurants and are being executed properly.
- Work with Executive Chef to develop and operate an active HACCP program.
PHYSICAL REQUIREMENTS:
- Requires mobility and prolonged standing.
- Maintain physical stamina and proper mental attitude to work under pressure and effectively deal with guests, management, and employees in all situations.
OTHER REQUIREMENTS:
- Ability to read, write, and speak in English.
- Knowledge of general office skills.
- Excellent organization and coordination skills.
- Ability to perform basic/intermediate math.
- Ability to maintain confidentiality of sensitive information.
- Ability to establish and maintain an effective working relationship with management, staff, co-workers, and enjoys working with and assisting people.
EDUCATION / EXPERIENCE:
- High School Education or equivalent.
- Five years or more supervisory experience.
- Ten years restaurant experience.
CERTIFICATE / LICENSE:
- Southern Nevada Health District Food Handler Card (Health Card).
- ServSafe certified.
