Skillfully prepare all types of sushi including nigiri, maki, futomaki, sashimi and rolls.
Identify and select raw fish and other specialty ingredients that are fresh and high quality.
Use distinctive flavorings like rice vinegar, ginger, soy sauce and wasabi appropriately.
Creatively display sushi dishes.
Interact with customers, explaining ingredients and preparation methods.
Maintain proper hygiene and food safety practices.
Monitor the stock of ingredients and order more as needed.
